Advice for 1st time visit

We will be spending 2 days in MK and 1 day in AK next month (Feb 21-23). Our two kids are 5 y/o and 8 y/o, but they are pretty timid with scary/thrill rides, so we'll likely skip roller coasters. We'll also be with my 72 y/o mother. We're within our 60 window for FP (staying on property), and just looked at FP stuff yesterday. A bit overwhelmed with strategy, and fast passes for rides like Mine Train only available for late in the day already. Anywho... We have Peter Pan's flight, Pirates of Caribbean, Mine Train, Splash Mountain and It's a Small World on our list for FP. Any advice of others to add, rides that we don't need FP for, strategy in general? Also, any way to view a list of FP availability for a specific ride, instead of the website just assigning times for 3 rides? Thanks in advance!
