Intensive Spanish Course in Latin America

Who has attended or has knowledge about Intensive Spanish language courses in Latin America? Are they useful\effective? Would appreciate any information about them. I'm thinking about courses in the Dominican Republic, Colombia, and Panama - but info about other places appreciated too.

Secondly how difficult is it for a traveler in Latin America who doesn't speak Spanish or Portuguese? Can you get by?
