Child Travelling with great-grandparents

We are looking to take our 7-year-old great-granddaughter on holiday to Majorca this summer. Her mother is more than willing to permit this although her father has had no contact with the child since before Christmas 2016. Would a letter of consent from her mother, obviously with whom she resides permanently, to travel and give us permission to authorise any medical treatment whilst away be sufficient for Spanish passport control/immigration. I have looked on the Spanish embassy site which just states 'a minor travelling without parent/s should show a letter of permission along with a passport' I don't want to book and possibly lose a few thousand pounds on the off chance we would not be allowed to enter Majorca. Any advice would be much appreciated.
