Interrailing with young children , help needed !

Hi , just looking some advice perhaps from people who have done it before. I’m a single Mam and want to do some traveling around Europe this sept for maybe 3-4weeks with my little girl. She is 3. this is something I’ve always wanted to do but never had the chance to do before I became a Mam and don’t see why I now can’t experience it along with my little side kick. I’m from Ireland so I would be hoping to get the Eurostar from london to Paris to start off with and then I’m pretty much open to all suggestions. I’d like to see as much as I can. For it to be as fun and adventurous as it can but also family friendly. I want to be super organised before we leave and to have a definite route mapped out with all major trains booked in advance if possible. Has anyone any suggestions on destinations that are good for young families ? Or any advice with anything regardling traveling Europe full stop. Any help would be greatly appreciated !
