Phones & other electronics in London?

While my friends may think I know 'everything' about techie gadgets the truth is I only know what I use frequently. BUT that means I will be a newbie in London. Our USA phones are Tracfones... they will not work in London. They are not compatible with sim cards, etc. But can I still use the wifi signal? Will some apps work? What would be a couple of 'best' apps that would work on wifi only. Maybe something that would work offline once I leave the hotel? Also, We will have at least 1 laptop and 1 Samsung tablet with us. Again, the same question of wifi only apps, then offline? Should we invest in a disposable UK phone? Our trip will also include a week in York and Edinburgh?

Bottomline: I like everyone else am familiar with Google maps and did learn to use TFL on our last trip 3 years ago. BUT that was 3 years ago... are there new apps or specific local apps that might serve us well?
